- Step 1Preheat oven to 200°C. Chop sweet potatoes into chunky fries or wedges and place in a bowl.

- Step 3Heat two pans on high heat. Add the seasoned sweet potatoes in a single layer and flash-fry for about 5 minutes until they have some colour and a crispy outside.
- Step 4Transfer the flash-fried sweet potatoes to a baking tray, keeping them spread out. Bake in the preheated 200°C oven for 20-30 minutes depending on thickness.
