Step 1

Mix 250 g harina 000 and 250 g harina 0000 on the counter in a volcano shape. Add 15 g honey, 10 g salt, 50 g sugar, vanilla essence, 300 g milk and 25 g yeast. Knead until the dough is well incorporated, soft and smooth, adding a little extra milk if needed. Do not add extra flour unless absolutely necessary.
